Mmmm

Please explain what exactly is your question as your post is unclear?

If you are asking what is your due south satellite then for you it is 1.297 East but there is no sat there so either 1 deg West will have to do or Sirius at 4.8 East, you are in the middle really. It is only applicable if you are trying to set up a motorised system

My System: Smart lnb, 1m Gibby dish, Stab motor, TM5200D receiver, 57east to 61west. DTT from Sudbury. Virgin Media broadband.

Why use 11 o'clock?
The sun is at it's zenith at 1pm (BST), 12noon GMT, at the zero meridian (Greenwich) in general.
Your best bet is to track the shadow of a pole round about 1pm (at present) then mark the highest point. THat then should be your true south.
