As they are both transmitting a middle East beam you will need a minimum of 3.5 mtr, it may even be more

But which channels? and 2.5 mtr isn't exactly a hobbyist size dish and still requires planning permission in Ireland. Someone may be lucky and get a side lobe but generally just look at the map, it is way outside the footprint

My System: Sky UK. FTA analogue & digital satellite from 6 fixed dishes (5E/7E/9E/10E/13E/16E/ 19E/23E/28E) Pace MSS100, Echostar IP3000VA, Technomate TM-1000D, Dreambox 7020S

Another thing to remember is that both the old Nilesat craft will be removed from service in the next couple of years. Its quite possible the new birds will restrict the coverage even further with shaped coverage footprints, so your expensive purchase of a big dish could be a wasted investment.

A slingbox setup in the Middle East by a friend might be a good solution for you, and a lot cheaper than installing a large dish.
All you need is a spare LNB for both satellites, FTA receiver, Slingbox Solo and a high speed internet in both locations.
You can watch on your PC or buy another Slingbox to connect to TV.

I very much doubt you bought a new pukka DB500 - they have been out of production for a very very long time.

Presumably its set up for a card share - either the config file is wrong or the share server is down, or possibly the network cable is damaged....

Yes indeed - and thats an easy catch on any sized dish in the UK, or indeed almost anywhere in Europe.
