Which is the best softare to edit my hex files. What I want to do is delete the adult channels from the hex files, save the new file and load it on a new goldwafer.

My goal is that I can leave the card (without adult channels) in the digibox so the youngsters cannot see the mature content. Whenever I want to watch the channels I can simply insert my current card.

Can putinng your card in/out f??? up the card slot in the reciever?

Editor: has been discussed before.
Search on "editor" and this is one of the many threads given:

Eventually, yes, the card and/or CAM contacts could wear out, but we are talking millions of insertions before you need to start worrying. Think about it. If the frequent insertion/removal of smartcards were to cause problems then half the world's bank teller & cash-card machines (and bank cards) would be useless... not to mention the countless other devices and cards that use the same technology.
