I live in Scotland.
Is anybody having picture quality concerns with PIK station and other greek channels.
I have a 1m dish. Is this sufficient?

Should be. I live in the Scottish Borders, and last time I had my scruffy 80cm dish round on 39E had no problems whatsoever with the interesting channels on the F1 & F2 beams off HellasSat 2.
