LNB Rotated Angle

I understand the angles associated with the azimuth and elevation of the dish. But I don't understand why the LNB may be rotated off its vertical axis.
Can someone explain please?
I am trying to set up a new dish from 40W 0N for Hipasat @ 30W.

Its known as polarization Tilt (skew) and is a critical part of the installation. Getting the right angle will greatly increase your signal. I use an HH motor, so my LNB is mounted dead vertical so when the dish turns (Azimuth) and tilts the LNB is in effect skewed. Easiest way is, treat LNB as the hour hand on a watch, Here in Spain we set it to 7 o’clock first and rotate it until the highest signal is achieved. On Hispasat my LNB is at 5 o'clock.

Many thanks for that.
A supplementary question then:
I only want to use this second dish for Hispasat - as the dish is eliptical with an offset feed is it better to skew the whole dish (I have a HH motor so doing so would not be a problem)
I too am located in Spain (halfway between Barcelona & Valencia)

If you mount the dish just on a pole its better to mount the dish vertical with elevation, and skew the LNB.
If you use a HH motor, mount that vertical with the recommended elevation angle, then set the dish declination, with the LNB vertical. so when you turn the dish with the motor it will tilt the dish giving the exact skew on the LNB.
