do you have to do one step at a time, or can you just move west till the signal rises then fine tune
ive tried finding HOTBIRD, EUROBIRD and ASTRA to no avail yet
Well, if you haven't moved the motor and had reception previously you should be ok. Have a look at the following thread,

Generally your box should be able to find the sats on its own, but that is more often than not a bit problematic. Finding the sats and storing manually is probably the easiest solution.
Finding the sats should not be too hard, it is well worth setting a strong transponder (see idiot guide for a link to a list of those) and then slowly moving the dish. It should not be too hard finding strong ones like 19 east, 28 east or 13 east, especially if you got anopther satellite dish you can see. Then you can get some sort of idea where to look.
