I have an old subs card of mine that previously opened MTV Music and a few others, not used it in yonks, will it still clear them despite it not being one of the newer CAID cards?

I think you can try and see if it does but i also think it won't .

Is that an old Sky Italy card ?

This is a Sky Italia smartcard.
I had one like this for a 12 months subscription (still have it) and after that it stopped clearing the channels.
Of course it worked only in a genuine Sky Italia receiver which I ordered at the same time.
You can check the validity (in this case the expiration date) if you insert it in the receiver smartcard slot that you used before to clear the channels and select the smart card menu authorization.
If you want to buy a new subscription, TV Corner still sell them, but it is not cheap for example Sky TV + Cinema costs Euro 429. Sometimes they make special discounts, especially during Christmas time.
Check first if the new Sky Card (red not blue) will work in your receiver model, or if they would sell you a card if you didn't buy the receiver from them.

It was a prepaid card, Id love to check if it still clears the "free to view" channels but I no longer have the wee Samdung SD box I used with it.

My plan was too use Oscam as I have card slots going spare, but I've no clue as to what configs to use etc.

I don't know what do you mean by Free to view channels as I am used to FTA channels and for that I don't need any card. Any good receiver would fetch them.
Please clarify.
I would be very surprised if it will open any encrypted channels.
Try inserting it in the VU+ receiver that you have on the list and check the card authorization.

Ftv - conditionally encrypted but available without an extra monthly or other ongoing subscription - basically a one off payment for the card which lasts a number of years. Not common outside the Sky empire - it was widely used at 28E although its falling out of favour these days with all the extra spotbeam capacity.

Thanks. I had this on an n+ subs from Poland and after the premium channels disappeared, the card still opened several national channels for one year. All this was shown in the authorization menu and this is what the OP should do first of all to check if there is anything worthy left on his card. I know mine (which is just like his) does not clear anything now.
