Edited: Obstacle Checker gives Line of Sight (LoS) information - and that would be correct for a prime-focus dish - but, I assume, for an off-set dish, the LoS is the line drawn along the off-set angle when the beam strikes the dish face(?).
It does not change. The position of the satellite does not change between a prime focus and a offset dish.

I hope I never implied that it does - but I think that it does mean that an off-set dish can be mounted very very slightly lower on the wall than a prime focus dish would have to be to "see" the same satellite (?), or does it mean the dishes would be mounted at the same sight but at different elevation angles (= another ?)?

The most important part - the dish (reflector) is exactly the same position. The elevation angles differ meaning the offset lnb is the lower of the two.
