I've noticed that my pace box doesn't save the default transponder I keep setting. It seems to save it and remember it for as long as I'm flicking through the EPG but once I start watching a channel and go back into setup, it's back to 11.778. Any ideas / seen this before ?

Its probably picking up a strong enough signal from the north beam default to override your settings.

On any box I've ever had I've never been able to change the default transponder permanently. It has always re-set itself to 11778 v.

A sky box is pre- programmed to return to 11778 whenever it can receive this frequency. Only when it can't see this will the box stay at a different default transponder. Returning to default of 11778 is a sign that your setup is correct, and your dish is big enough for Astra 2A & B north.
