Does any member have a recipe for a very slow roasted pork joint?

Just the basics made in a deep pyrex casserole, including quartered onions, peeled carrots, loads of herbs, meat stock and taking no less than 5 hours at low oven heat ~125C so the meat is very tender ( falling apart ) and the crackling is crisp.

I tried pulled pork on pork collar in a dutch-oven the other day. Turned out that 125C was far too high, after 3 hours I checked the temp but it was already too late and it had become dry.
Kept the sauce simple, tried North Carolina style - not much more that red pepper and apple cider vinegar. Still eatable.

Just eaten tonight´s dinner. Gammon, rather than pork, but ooooooh so good!
Cooked in the slow cooker for about 8 hours. Gammon joint and 330 ml of coca-cola. No knife required, impossible to carve, has to be pulled! The sauce is also excellent, although a little salty for some, but not for me.
Will try it again another time with some veg in it as well. Should also work with pork, but obviously no crackling ( best bit about roast pork )

Sounds nice - If I remember to, I soak my Gammon Joints in several changes of cold water before cooking, in order to get rid of some of the saltiness. Being ex-RN, I need a certain amount, obviously.

Thats my easter day dish, gammon with pease pudding, oven roasted potatoes, parsley sauce and cranberry jelly.

Like Tivu I soak in water with frequent changes to remove the salt before beginning this meal.

Sadly, I don't think Dinard Airport is open tomorrow...however I have just sent two generous slices of pork to you, via Chronopost......expect them around Good Friday...your sprouts should be just about ready

My slow roasted pork joint was a bit disappointing but not a total disaster, however resorted to a slow roasted leg of lamb with rosemary sprigs.
