I have a Marconi Solo 1 LNB connected to an old Pace analogue receiver( currently in working order receiving German stations) is this LNB suitable to use with a Sky digibox and the dish re-aligned?

Only if it is a universal LNB, it should have it written on it, if not, let us know what it says.

What settings are there in the Pace LNB menu?

Marconi Solo is not a universal LNB. I'm quite certain about that because I recall using one with a brand new Amstrad SRD510 - which means it was manufactured years before Sky Digital was born.
