Can someone explain to me why the Richardson goal against Boro was not deemed to be offside??

Well, I would expect that it would have been mentioned in match of the day or in other match reports, so maybe there is something in the offside rule that deals with this case? I am pretty sure when he passed the ball there was only the keeper in front of him.

At first I thought he was offside, but I think that he was behind the ball when the ball was played (in which case he was not offside).

Correct, if you are behind the ball then you are onside.

I watched the match and must confess that I had not even considered the possibility of it being offside, as he was running towards the ball and was well behind it when Rooney kicked it.

it was not offside as there is officially a blind spot in that part of the pitch (as demostrated in the final minute of the match ;))
