Just had one of these on a whim.

A Microwaved freshly made Sponge Pud for two, with Custard, done in 12 mins from inception to consumption.

Partner 1:

2oz Butter and 2oz Caster Sugar (Golden gives a better appearance), warmed for 8 seconds in the Microwave and lightly creamed with a fork

Add 2oz Self-Raising Flour, few drops of Vanilla essence/extract and one egg soundly beaten.

Stir until happy (or grumpy, if that's your thing).

Partner 2: Custard ingredients at the ready, start making it and give oppo four minute bell.


At the four minute mark, Partner 1 heats a dessert spoon under the hot tap and uses it to drop an enormous dollop of Golden Syrup into a Pudding Basin, then spoons on top of it the sponge mixture.

Immediately bung it in the Microwave for two and a half minutes, awaiting the 30 second bell from the Custard queen.

At the 30 second bell, reheat for about 15 seconds and serve in two portions.

Partner 2 pours Custard on top.

Done.


You cannot tell by colour, texture or taste that it has not been steamed for weeks.

It sounds really delicious........sadly I'm lacking two important ingredients:

Golden Syrup (can be obtained via the 'etranger' aisle but I refuse to pay quadruple the UK price. It may be on a shopping list for my import agent)

A partner. Living on ones own does have drawbacks, unless I can teach one of my dogs to use a spoon and work the microwave.

It could be done by one person, just taking a couple more minutes. Not for the faint hearted what with milk being heated on the hob and the fact that overcooking the sponge by half a minute would render it to be engineering brick.

Rifling through my vast store cupboard, I've discovered a couple of tins of Ambrosia Custard which only need depositing in a suitable container and microwaving.....the requirement for Golden Syrup is now more pressing though, as the custard goes out of date at the end of February 2011.

This one of the areas that a microwave really excels. I find it hard to believe that we used to steam our Christmas puds for hours and now it's just a couple of minutes work.

Pfah! Probably good for another ten years. Providing it's not rusty though.

Absolutely ......... although overcooking in a Microwave Oven is not good!


That said, my Mother's party trick, oft repeated, was to weld plastic basins to the bottom of her Pressure Cooker.

Forget the Syrup and simply stir a handful of dried fruit into the uncooked sponge.

Tivu. Yes the syrup sponge is great in the microwave. I often cook them. Sometimes for a change I use jam instead of syrup.

Remember when I had a Saturday job in an Electrical store about 25 years ago, and we had microwave demonstrators in from Sharp. They would usually cook sponges. Absolutely lovely. Can´t believe that people only use microwaves for re heating meals or ready meals. I use mine for alsorts.

Not if you just use the Coconut ones.

Leaving aside liquorice (of which I'm not a fan), is there any reason why the sponge pudding wouldn't work with honey instead of syrup? There are plentiful supplies of honey available, some of it from local suppliers.

None at all. Sounds like a rather nice variation - let it rest for half a minute before tucking in as any jam/honey/syrup will be scalding hot from the Microwave.
