I'm making this for lunch today;

One medium sized head of Celery, washed and roughly chopped (Leaves as well)
One small onion or even a leek, finely chopped

Sweat those together in 2oz of butter

Meanwhile, boil to death (90mins should do it) two tablespoons of Pearl Barley. DO NOT SEASON (It goes tough)

When veg are soft, add a pint of boiling water with a Chicken stock cube dissolved in it.

Simmer for an hour or so.

Blitz to desired consistency and return to pan (Should not need to be passed through a sieve).

Drain and rinse the cooked Pearl Barley and add to the soup.

Simmer for another fifteen minutes or so, seasoning to taste.

Serve with some grated cheese on top and some bread on the side. Dunk as required.

Scrummie.

Actually, my Catering Plan showed "Pasta & Bean" Soup for today, but I've no small Pasta shapes in the larder (Could have broken up some Spag, I suppose).

Or suitable Beans.

I must have missed the Plannig Meeting ................
