How are Symbol Rates Decided?

My Satellite Setup
2x 1.8m Raven (7e Fixed, 30w-45e)
2x 1.5m Gibby (23.5e / 13e)
2x 1.2m Gibby (10e / 30w - 45e)
3x 1.1m Generics (15w / 0.8w / 28.2e)

A question I've had a while,

If you look at feeds on 7e for example, SR is fairly standard

4937, 7120, 7200, 9744, 14400, 19200


However, you can get some real random ones like 14362


What decides the SR to use? Im aware its related to bandwidth, so 3Mhz vs 6Mhz etc but why 14362 vs 14440? or 7120 vs 7200?

 
My understanding is that the higher the SR, the more bits per second it can push through - resulting in better picture quality. But beyond that, I don't know...
 
The amount of bandwidth available (eg limitations of the transponder) as well as what is needed for the feed(s) will also influence the SR.
