Re the iPhone, IS the IOS still as secure as it is reputed to be, as I have seen comments to the contrary?

Yes and no.

iOS was updated a few days ago, it won't last long before the next lot of loop holes get closed down.

My bank has won awards for the security aspects of their banking app, the banking apps do not work on rooted/jailbroken phones.

In this day and age nothing is 100% safe, so all we can do is take all reasonable steps we can.

I keep my contactless debit card in a foil lined tyvex envelope in my wallet.

My iPhone has all of the fingerprint security options switched on or pass codes when finger print is not available.

I also use the Apple Pay function quite a bit, it's handy for when I am in the supermarket.

My sim has a separate pin code, I need to enter the pin every time I turn the phone on or off.

Well, now "someone" might know how and where to "defeat" your precautions - "thanks" for sharing, although I would not have :D

10.3.3 on the iPod touch, as of yesterday.

Foil is 'de rigueur'.

According to the banks Apple Pay is secure, the contactless debit cards are the "open" part of the system.

The contactless chip doesn't contain any personal information only the "temp" number, this number is saved every 4-6 times you use the contactless you have to revert to chip and pin the count clock is reset in the contactless chip. It's a bit more involved.

Do you use a cordless phone by any chance? Or live in a old council house?

Yes (DECT) and No.
From the question, I'm guessing that you consider that there might be a potential vulnerability in the former?

The council houses have had an issue with the locks being reused in the same road.

In Sherborne the council put in the same looks throughout the stock. They only had 5 combinations, so when people were locked out, pop next door and ask them to let you in.

Plus the coal would also get stolen as yet again the same locks and keys were used.

It's a very simple fix! Change the locks like I have, mine are very fancy! And rather expensive and not domestic locks!!!

All my telephones are hard wired apart from the iphone.

Re the locks - the same was true of the locks on the (not council AFAIK, but it may have been) estate in Yate outside Bristol where I stayed for 8 months in 1984/85 - except that there were only 4 combos! Only found that out after the house in which I was staying got burgled, and I needed some new keys!

Current house has "pretty good locks" and a monitored alarm system :D

Re the phones - DECT phones are quite short range (<100m) so I would expect the likelihood of deliberate interception to be pretty low

The best defence I have is:-

He has stopped numerous people trying to jump the wall at the bottom of the garden or climbing the fances.

I take him to the cash point, he keeps everyone back to the length of his lead.

Some one tried the other night to double back on me to try and rob me, Foz knew and double bluffed him and sent him packing.

Foz is a 14.5kg Poodle cross.

When I lived in Sherborne, a load of flats had post stolen, the problem was the postman not pushing the letters fully through the door, a few minutes after the postman an undesirable person would steal the letters from the letter box.
We have the same postman apparently. I always push the letters inside the letter boxes for my neighbors. I live in a building with 15 apartments. Bank statements are delivered through the mail and when I asked my bank not to send me any bank statements, they told me they are obliged by law.

I thought that most places in the South West (with a few exceptions like parts of the Bristol area where I lived for nearly 6yrs) was quite a safe area compared with London - but now I'm not so sureo_O
