Problem with signal.

my system starts with a fibre optic lnb which runs to a splitter and then to a virtual quad lnb. The signal then goes via 2 coaxial outputs to a distribution switch. Then two outputs from the switch to a single sky box which then goes via hdmi to a 4x4 hdmi over cat6 matrix. This has been working fine for about 3 years. A few weeks ago the sky box started to lose signal, gradually getting worse until it now gets no signal at all. I do have moles near the dish so that could be an issue. My question is how can I check that a signal is being received from the dish? Should I see light coming out of the fibre optic like a toslink?
 
Pop the top off the Sky box and see if there are any bulging capacitors around the power supply area.

Loss of signal symtoms as you describe are absolutely typical of a failed box.

Sky Boxes are cheap, inflexible tat and prone to incipient gradual failure.

Although i haven't looked inside the box, I did swap it for another sky box, which worked for a few days and then also stopped.
