Questions about Multi-Room setup

I'm currently a Charter subscriber, but am considering switching to Dish Network.

As I understand it, the receivers are the Hoppers, and one of those is necessary. I would put that near my main TV. I also have a TV in a second room I'd like to use - what are my options for getting the satellite feed in there? It seems like the Joey is the extension box, but how do I connect it to the hopper? Do I need to run coax cable? I have Cat5 cable going to that room already, can the signal be sent over network cable? Are there any quality losses or lost functionality in doing so? I see there are also some Dish Anywhere apps. Would one of these apps on a connected device be a viable substitute for a Joey? Do they have the same functionality and quality?

I also have a cabin where I'm interested in getting satellite service. If I purchase my own dish to install up there, and buy a second Hopper, will I be able to watch up there as well? If someone in my family is at home, and someone else is at the cabin, will they both be able to watch?

My Satellite Setup
Technomate 5402 HD M2 Ci, DM7000s, Transparent 80cm Dish, Moteck SG2100 DiseqC motor, lots of legacy gear. Meters: Satlook Digital NIT, Promax HD Ranger+ spectrum analyser.

No experience with Dish TV equipment, but appears to be similar but older version of the UK Sky Q system with a main Q Box and two or three Sky Minis, which connect to the main box wirelessly and offer you the same content as is available to the main box.

The Q system can also be connected by network cable and you can watch live TV on each Q mini from the 6 tuners on the main Q box, this is where it looks like it differs from the Hopper and Joey, as it appears that the Joey for live TV watching, requires a Joey model with a tuner (not all versions have this) and connection to the dish.

OpenBox X5 on a 1 meter motorized dish.
And now a 10 foot "C" band dish.

Deep in the Boonies in the central Sierra Nevada mountains of California.
If you go with Dish then they will do the install, the dish, all coax runs, the internet node and connections (if needed) to any joey(s), 1 hopper is needed for the main TV, then a joey can be put at any other TV you need, the joey can be a wireless setup (no coax or CAT5 needed) the internet node connects to your ISP modem, then the system will have a internet connection.

As to the cabin setup, you can buy your own equipment and register it with Dish but it will have to be on a separate account for that address, one way around this is to use a setup for an RV, this is a special receiver setup to use a mobile satellite dish, (you can use a standard one) this receiver will be on your home address.

The setup for a hopper system is a bit complicated and I would not do it your self unless your a satellite dish installer that has done one before.
