A few months ago we had a very bad day weather wise, with winds up to 80-90 mph. Since then, anytime we get a cloudy/rainy day we get a freezing picture broken sound and quite a lot of the time "no signal being received".
Could this be due to the dish having been slightly moved during the windy day?

Most likely.

If you try to realign the dish yourself it is useful to know that the digibox signal meters are slow to update, so move the dish a very small amount, then wait a few seconds before moving it again. This would be much easier to do if you can see a TV while moving the dish.

What are you current signal strength and quality readings?
 
Signal strength is about 40%
Signal quality is about 10%

I know they were better than this before.

Its pretty grim out. Raining windy and lots of dark clouds.

PS. It's actually fluctuating between 10-40% as I look at it.
 
If it is fluctuating lots then it could just be a poor connection at the dish, (with the wind blowing the cable causing the fluctuations) to check this see if the connector is tightly screwed on, if it is not unscrew it and make sure it’s not damp inside on the cable, then tighten it up again and put more tape on. It is much more likely that your dish has moved, but it would be annoying to try realigning it when it’s a connection problem.
 
Most dishes have a little flex in them, so you could just try 'twisting' it side to side (and holding for a few seconds) by griping the outermost edges to see what you get. Be gentle though, you DON'T want to permananantly distort your dish face. I use this technique all the time to ensure my dish is spot on. Bigger dishes will flex more, so don't 'gorrilla' it.

When up on the roof, should I coat the surface of the LNB with something to aid rain dispersal?

The lnb is designed to withstand all weather but the weak spot is the connection.You should cut the end off and redo the f connector and after you connect to the lnb protect the connection with amalgamating tape.Was your dish out of alignment?

Not sure. Haven't been up yet to see. Great result against Blackburn.
