I mentioned briefly elsewhere that I was trying these to go with our Lamb Lunch today - well, we've had 'em and they were a triumph.
Not my Recipe, but Gordon Ramsay's (Saw them on one of his Crimble Dinner progs a couple of days ago and took a shine to them).

They came out perfectly, really crunchy and beautifully coloured on the outside and meltingly soft inside.
Just a pinch of Chilli flakes gave them wonderful warmth without overpowering anything.
