I've tried various Recipes for Sticky Date Cake over the years and have refined them to our own taste:
It's good for using up old packets of Dried Fruit, tins of Carnation etc.
Slowly melt an entire 8oz block of Butter in a large, heavy saucepan then add around 120z mixed Dried Fruit and around 8oz of Chopped Dates.
Then add one large (400-440ml) can Evaporated Milk and around 1/2 pint Water.
Mix thoroughly whilst very slowly bringing to the boil (You'll very much regret giving it a "high-fire" as the Italians say) then turn off the heat and simmer for around 4 mins. Stir in a BIG dessertspoonful of chunky Marmalade.
Let cool.
When cool, weigh 120z of flour (White or mixed White & Wholemeal) and add a tsp of Bicarb and a large pinch of Salt.
Pitch the Flour into the batter and mix thoroughly.
Then simply bung it in a parchment lined 8" Cake Tin and whack it into a pre-heated oven at 160-170 C, covering it with extra parchment to stop the top burning.
Scrumsville: Will keep for quite a while, if you're not especially hungry.
