Isn't Rabbit a common element of Valencian Paella?

BTW I don't like Paella Mix Seasoning - tends to contain Turmeric instead of Saffron. Decent colour, odd taste. Pah!
Rabbit and chicken are common elements in most of the regional paellas, many combine both. Problem is the misses doesn´t want to eat Bright Eyes!
I don´t mind the mix, the one I use has peppers and azafran which is known as the saffron crocus

Exactly.

But I'm sure the yellow colouring could be achieve with just a food dye, rather than introducing an alien flavour.

Agreed but when we did the paella course he only used a few strands of saffron after first infusing them in hot (boiling?) water..

Nothing much to report yesterday, so I didn´t! The only big thing was the Community of Madrid health director resigning when the Madrid gov applied for phase 1 of de-escalation. Finishing off the previous day´s paella, so didn´t cook either.
They have announced that over 51% of the population moves to phase 1 on Monday. The whole of Madrid community has been held in phase 0. As has most of Catalonia ( Barcelona ) and other areas. In Valencia, many of the more rural areas go to phase 1, but big cities are still in phase 0, Valencia, Alicante, Elche, and all but one area of Castellon. The same is repeated around the whole country, most big areas have not been moved to phase 1, rural areas have.
This means where I am bars and shops can open under some very strict rules, but a step forward.

So to tonight´s fayre
While chomping on the paella yesterday, my daughter sent me a pic of her tea from the local " chippy ". Battered sausage, pea fritter and chips.
That got me thinking. Although the nearest fish and chip place is now allowed to open under phase 0 for take away, I couldn´t be bothered to phone and pic it up, so decided to make it myself.
What do you think?

It is possible to reheat rice, but people must take precautions to ensure it is safe to eat. Rice is more problematic than some other leftover foods as it may contain bacteria called Bacillus cereus, which survive some cooking processes. This bacterium is often the cause of food poisoning from reheated or cooked rice :-toilet:-toilet:-toilet

Nothing wrong with a good clearout! However, if heated correctly no problem. Also, paella is very nice cold, or ambient temperature.

From what I have learned in the past, it is "reasonably OK" to thoroughly reheat rice for up to 2 days - but no longer - after it was cooked, and that's the rule we have followed for some time with no adverse effects (so far!|).

Going back to the rice. Many people believe it has to be thrown the next day and cannot be reheated. This is not the case. Rice when allowed to cool can be stored in the fridge and used for a couple of days, or it can be frozen and used several weeks later.
Cannot remember the name of one of the top oriental chefs on UK tv who on " Saturday Kitchen " a few years ago stated both he, and his mother have always cooked far too much rice in one go and frozen it for use later.
I think he´s still alive!

What about the rice sold in the chilled meals section in most supermarkets - that appears pre-cooked for reheating at home.

IIRC the important bit is the speed at which the cooked rice is then chilled or frozen. It has to be done as quickly as possible in order to minimise bacterial growth.

Speed is indeed a major factor. In the commercial environment they can chill or freeze very rapidly. Even if you have a quick freeze area or button on your freezer it would be like comparing old dial up internet to a fibre connection.

What do you mean "old" dial-up?

It's still the pinnacle of technological achievement in some places!
