Here is the pole, which is fairly plumb, but the brackets holding the motor and dish are off.

Very common - the mere act of tightening them has a propensity to induce distortion and slippage.

The pole and mounting system is possibly too good since the motor clamps will not 'bite' into the metal. Once you have found the correct arc I wold drill and tap a pair of self tapping screws through to keep everything in place.

That's because the south center of your dish is not centered correctly. Usals alignment is easy once you align the dish perfectly to the satellite that's closer to your south.
For instance, Astra 23.5E is the closest to my south since my longtitude is 22.942 E.
So what I should do is connect the motor and the dish to my receiver, set up usals in Enigma2 with my exact coordinates (google them), and then give the command for my motor to drive to 23.5E. This will swift a little away from point 0 of my motor meaning it will move a little.
Now, I set up motor elevation to my latitude (this is 40.68 in my case) and screw that in place (not tightly so it can be changed if necessary).
Then with that set up, I move the whole motor and the dish with it to find Astra 23.5E and align both declination and elevation of my dish to get the maximum signal. I use a weak transponder for that.
Now I try both arc ends with a western and eastern satellite. I check the elevation on both positions and if necessary I return to the center satellite and do the correct alignments again.
In your case it's apparent that the 0 point of your motor was not setup as it should. Your arc has moved towards the east.

You are correct about using a weak transponder, coz' i couldn't increase the signal on Tv Rebel :(
 
So, i did a re-alignment again, using Astra UHD Demo channel at 23.5 east, i was able to have signal on 34.5 west & 70.5 east.
But with minor elevation & declination on both ends, the whole dish is a bit wobbly at these positions. I also changed my longitude settings by a .500, up & down to see only slight improvement at 30 west. Still needs some fine tuning and a compromise. Btw, 4.8 & 3 & 1.9 east are blocked by the tall tree, the reason for no signal yesterday, also 5 west wasn't clearing either :(
 
Hi, i managed to setup the dish again, this time i adjusted the brackets on the motor shaft by a nudge, it improved the signal on 23.5 east!

Most of the arc is tracking good, only at both ends from 30 west & 60 east needs a .250 change up and down in longitude settings to be stable, i even got a signal on 45 west. The one thing i didn't adjust, was the elevation angle on the motor. Still no signal on 3 & 4.8 east, due to obstacle.
 
A little swift on the extreme east and west (mostly west in Greece, since we're on the Eastern side of the equator) is normal. If you receive a good signal from 45W and 90E you're good to go. For maximum precision on both arc ends you can use a manual setting with Diseqc 1.2.
Looks the elevation angle of your motor was good, you're lucky.
 
I'll have to use different settings to reach 90 east, i only went to 74.9 east this time.

Hi, i moved the dish to 90 east and 45 west, without modifying my longitude. Also, the dish would not move further at both ends, must have reached the limits.

Very well, this means your arc is on point, congratulations.
Not moving any further than 135 degrees is common with moteck motors, especially if you don't modify the screws.
BTW, I'm so jealous of how strong Astra 2E is on your area.
 
Yes, i managed to get it right! However, my friend the installer came over to see for himself, and after doing some tests he found the backlash on the motor was too much on the extremes. So we dismantled everything and re-tightend the main srew on the shaft, setup the motor and dish again and re-aligned, this time checking motor angle elevation. The motor and dish are more stable now :)

Still needs some tweaking, for peaking the levels. I thought the moteck sg2100a did 150 degrees. Btw, which satellite position are you referring to?
 
I can't see where i'm better off? On the footprints at satbeams.
